Easy Holiday Fudge

It’s that time of year again when our thoughts turn to yummy treats. Well, I don’t usually need a special holiday to think about yummy treats, but I do tend to think about them MORE during the holidays. 🙂

So I thought I’d share with you a quick and easy recipe I’ve experimented with (with good results!) for making fudge. It’s something I sort of stumbled upon while preparing for Thanksgiving.

I made a pumpkin pecan tart that needed half a can of sweetened condensed milk. Well, that left half a can unused. You can’t seal the can again, so what to do? Seemed a waste to throw it away, and I had no pumpkin left for another tart.

Not being Gordan Ramsay, Julia Child or a Chopped winner, with an innate ability to look at an ingredient and know instantly what to make with it, I looked up online what you could make with sweetened condensed milk and discovered FUDGE. Oh yum! And I had left over pecans, too, which would go great with fudge.

So, here is a quick little recipe for on the spot fudge from leftovers that tastes delicious. No idea how it relates to other fudge recipes, just that when I made it, it tasted good. You may have to be a fan of dark chocolate to agree, but here it is:


  • 1/2 can of low-fat sweetened condensed milk*
  • 1 cup of semi-sweet Nestle morsels**
  • 1/4 tsp vanilla extract
  • 1/4 cup chopped pecans (or other nuts)
  • Foil or parchment paper
  • Cookie sheet


  1. Place the morsels and milk in a glass bowl. Stir.
  2. Microwave the mixture at 30-second intervals, stirring until smooth and creamy.
  3. Mix in vanilla and stir until smooth and well-blended.
  4. Add nuts and stir until nuts are nicely integrated.
  5. Spread the mixture over foil or parchment paper on a cookie sheet.
  6. Refrigerate until hardened
  7. Chop into pieces and enjoy!

* These are the ingredients I used when making the fudge from my leftovers. I imagine you can double all the ingredients (and use a whole can of milk) and get good results.
** Doesn’t hurt to go a little over 1 cup. The more chocolate the better, I always say! 😀
