Authors in Bloom: Easy Tomato Potato Soup Recipe
I love to grow cherry tomatoes. I’ve always found they do much better in my yard than the larger variety. So much so that by the end of the summer my kitchen is often overrun. I’ll have cherry tomatoes ripening on every windowsill, window ledge and in bowls on the kitchen table.
What to do with all these little tomatoes?
A couple years ago, I shared with you one of the strategies: Bruschetta Mini Pizzas. This year, I’d like to share my other go-to recipe: Easy Tomato Potato Soup.
The Recipe
(Makes approx. 4 servings)
- 40 cherry or grape tomatoes
- 3 white potatoes (peeled and cubed)
- 3 large carrots, chopped
- 1 white onion, chopped
- 1 32oz. box of low-fat/low-sodium chicken broth (or vegetable broth)
- 1 cup water
- 1 tsp chopped garlic
- 2 tsp dried basil
- 1 tsp oregano
- a dash of ground cayenne pepper
- small amounts of black pepper and salt to taste
- optional garnish: parsley, croutons and shredded cheddar cheese
Equipment
You will need a large covered sauce pan, an electric blender, and a second sauce pan for use during blending.
Directions
- Add the vegetables to a large sauce pan.
- Pour in the chicken broth and water.
- Add the garlic, basil and oregano, then a dash of cayenne and stir.
- Taste the broth and add salt and black pepper to taste.
I find it usually needs a bit of salt, but not as much as you’d find in regular cartons of chicken broth, which is why I go for the low-sodium variety. You can also add more cayenne pepper if you like your soup a little spicy. - Bring the saucepan contents to a boil, then reduce heat, cover the sauce pan and simmer for about 40 minutes or until the potatoes and carrots are fork-tender.
- Ladle the soup into the blender in small amounts and puree until smooth.
Since all the soup can’t fit into the blender at once, use a second saucepan to hold the pureed soup until you are done. - Place the pureed soup on the stove to heat through if it has cooled while blending.
- Serve with a sprig of parsley, croutons or cheddar cheese sprinkled on top.Traditionally, this soup goes great with grilled cheese sandwiches. Enjoy!
Leftovers? Store portions of the soup in air-tight containers for a week in fridge or for months in the freezer.

I love Spring because the weather starts getting a little bit warmer and not as much rain or snow. I also love seeing the trees and plants start budding out with all the new green leaves.

I agree! I love that the weather seems to be getting warmer now. I don’t mind the rain so much, but I’m over the snow. The storm we had on Monday I hope is the last for the season. 🙂

I know what you mean! We just had a snow storm earlier this week and I was lamenting to my husband how I’d specifically made my doctor’s appoint in April so I wouldn’t have to drive in the snow. Guess what? Yup, driving in the snow. 😀 It can’t last much longer, though, I’m pretty sure. At least now when it snows, it tends to melt fairly quickly. But boy the daffodils were shocked!

I love Spring because it is the start of baseball season and watching my two little boys play ball makes me happy…. BUT!!! I hate the bugs that come with warmer weather lol

My favorite part of spring is sitting outdoors and enjoying my neighbor’s garden (because I have a brown thumb, and mine is not nearly as magnificent. Fortunately she likes to show it off!)

Definitely! Our pussywillows have bloomed and I have seen some neighbors daffodils come up, then a snow storm beat them down again, but I see they are rebounding. More to come, I’m sure.

What I don’t like about spring? m.u.d.
I grow tons of cherry tomatoes too. Have you tried dehydrating them? Oh my word they’re good. I dehydrated a bunch at the end of the season because I couldn’t even give them away at that point. I dehydrated them to raisin consistency and then put them in the freezer. I’ve been putting them on our homemade pizza every Friday night and it’s like a little burst of summer in my mouth with each bite.

Thank you for the recipe. We eat a lot of tacos, so that’s where our tomatoes usually go, but I will keep the soup in mind. I love Spring because everything starts growing…but I also groan because it means the allergies really kick in!

I like the weather in Spring. It gets hot sometimes but not so hot it is unbearable. You can still get outside and enjoy life most days. And, sometimes, we even get rain.
